Makes 18 servings, 2 Tbsp. dip and 11 WHEAT THINS each.
Place chicken in slow cooker sprayed with cooking spray. Mix next 3 ingredients until blended; pour over chicken. Cover with lid. Cook on LOW 5 hours (or on HIGH 2-1/2 hours).
Remove chicken from slow cooker; pull into shreds with 2 forks. Return to slow cooker.
Add Neufchatel and cheddar; stir until melted. Cook, covered, 20 min.
Reserve 1 tsp. onions. Stir remaining onions into dip; top with reserved onions.
Serve with WHEAT THINS.
