Makes 10 servings, 2 onion rings and 2 Tbsp. sauce each.
Ingredient list
1 cup sour cream
¼ cup mayonnaise
2 Tbsp. minced fresh chives
2 Tbsp. prepared horseradish
1 Tbsp. Dijon mustard
2 to 3 Spanish onions
Vegetable oil, for frying
1 egg
½ cup milk
1 cup baking mix
30 RITZ Crackers, finely crushed
½ cup grated Parmesan cheese

Combine sour cream, mayonnaise, chives, horseradish and mustard until blended. Refrigerate until ready to use.

Cut onions into 1/2-inch-thick slices; separate into rings. Set aside 20 onion rings that are 2-1/2 to 3 inches in diameter. (Reserve and refrigerate remaining onions for another use.)

Heat 2 inches oil in deep-fat fryer to 375°F. Meanwhile, whisk egg, oil and baking mix until blended; let stand 5 min.

Combine cracker crumbs and cheese in pie plate. Dip onion rings, 1 at a time, into batter, then into crumb mixture, turning to evenly coat both sides of each onion ring with each ingredient. Carefully add onion rings, in small batches, to hot oil; fry 2 to 3 min. or until crisp and deep golden brown. Use slotted spoon to remove onions from oil; drain on paper towel-covered baking sheets.

Serve onions rings with the sour cream mixture.

VariationPrepare the sauce with reduced-fat sour cream and reduced-fat mayonnaise.
How to Reheat the Onion RingsIf necessary to reheat the onion rings, place them in single layer on wire rack placed over baking sheet. Bake in 350°F oven 10 min. or until heated through. The rack with allow the hot air to circulate under the rings to help crisp them back up.
Special ExtraSprinkle additional chopped fresh chives over sauce in the serving bowl before serving with the onion rings.
