No Bake Chocolate and Peanut Butter Cookie Sandwiches

Makes 18 servings, 1 cookie sandwich each.

Ingredient list

  • ½ cup creamy peanut butter
  • 2 Tbsp. butter, softened
  • ½ cup powdered sugar
  • 36 CHIPS AHOY! Cookies, divided
  • 3 oz. (3/4 of 4-oz. pkg.) semi-sweet baking chocolate
  • 2 tsp. basketball-shaped sprinkles
  • 1 tsp. multi-colored sprinkles

Mix peanut butter, butter and sugar until blended.

Refrigerate 30 min.

Roll peanut butter mixture into 18 balls, using about 2 tsp. peanut butter mixture for each ball.

Place 18 cookies, top sides down, on baking sheet; top with peanut butter balls.

Cover with remaining cookies, top sides up, to make 18 cookie sandwiches, pressing top cookies gently into peanut butter balls to secure.

Melt chocolate as directed on package; spread over tops of cookie sandwiches. Top with sprinkles.

Let stand 10 min. or until chocolate is firm.
