Makes 6 servings, 4 topped crackers each.

Ingredient list

  • 24 TRISCUIT Crackers
  • 1 grilled boneless skinless chicken breast half (6 oz.)
  • ¼ cup light Caesar dressing, divided
  • 1 cup tightly packed coarsely chopped romaine lettuce
  • ¼ cup shaved Parmesan cheese

Directions

Place crackers, with sides touching in 6 rows of 4 crackers each, on parchment-covered baking sheet.

Cut chicken crosswise into 12 slices, then cut each slice crosswise in half.

Spoon 1/4 dressing onto each cracker; top with lettuce and chicken

Drizzle with remaining dressing, then top with cheese.
