Heat oven to 325°F.
Place cookies in single layer on parchment-covered rimmed baking sheet; brush lightly with butter.
Sprinkle with cinnamon sugar.
Bake 3 to 5 min. or until lightly browned; cool completely.
Spread dulce de leche evenly onto bottoms of 12 cookies, adding about 1-1/2 tsp. dulce de leche to each cookie. Cover with remaining cookies to make 12 sandwiches.
Store cookie sandwiches in airtight container in refrigerator for up to 3 days.
Substitute salted caramel sauce for the dulce de leche.
