Ingredient list

  • 2 tsp. oil
  • 2 stalks celery, chopped
  • 1 onion, finely chopped
  • 1 carrot, chopped
  • 1 container (32 oz.) reduced-sodium chicken broth
  • 2 cups water
  • 1 tsp. dried thyme leaves
  • ⅓ cup long-grain brown rice, uncooked
  • 1 cups chopped leftover roasted turkey (white meat)
  • 1 tsp. chopped fresh parsley
  • PREMIUM Whole Grain Saltine Crackers

Directions

Heat oil in large saucepan on medium-high heat. Add vegetables; cook and stir 3 to 5 min. or until crisp-tender.

Add broth, water and thyme; stir. Bring to boil. Stir in rice; simmer on medium-low heat 15 min., stirring occasionally. Add turkey; simmer 5 min. or until rice is tender and turkey is heated through, stirring occasionally.

Stir in parsley just before serving. Serve with crackers.
