Makes 7 servings, about 1 cup soup and 4 crackers each.

Ingredient list

  • ½ lb. lean ground beef
  • 1 onion, chopped, divided
  • 3 cloves garlic, minced, divided
  • 2 tsp. dried oregano leaves, divided
  • 20 PREMIUM Saltine Crackers, finely crushed
  • 1 egg, beaten
  • 1 Tbsp. oil
  • 2 cans (14 oz. each) reduced sodium beef broth
  • 1 can (14-1/2 oz.) stewed tomatoes, undrained
  • 1 pkg. (10 oz.) frozen chopped spinach, thawed, well drained

Directions

Combine meat, 1/4 cup onions, 1/3 of garlic and 1/2 tsp. oregano in large bowl. Add cracker crumbs and egg; mix well. Shape into 1-inch balls.

Cook and stir remaining onions and garlic in hot oil in Dutch oven or large saucepan on medium-high heat 3 to 5 min. or until onions are tender. Add broth, tomatoes, spinach and remaining oregano; bring to boil. Add meatballs; cover. Simmer on low 20 to 25 min. or until meatballs are done.

Serve with additional saltines.

Recipe Tips

  • Substitute

    Substitute frozen gound turkey, thawed, for the ground beef.

    Stewed tomatoes come in several different varieties - try one with garlic and jalapenos for extra flavor.

    Add 1 tsp. chopped cilantro to the meat mixture along with the oregano.
