Makes 8 servings, 1 cup soup and 5 crackers each.
Melt butter in Dutch oven or small stockpot on medium heat. Add carrots, celery, onions and thyme; stir. Cook 5 min., stirring frequently.
Add pork hocks, water, broth, peas and bay leaf; stir.
Ladle soup into serving bowls. Top with meat; sprinkle with pepper.
Serve with crackers.
Substitute green split peas for the yellow split peas.
Prepare this soup using pre-chopped vegetables found in the refrigerated produce section of your grocery store, purchasing 1-1/2 cups EACH chopped carrots, celery and onions.
