Makes 8 servings, 1 ice cream sandwich each.

Ingredient list

  • 1 cup mango ice cream, slightly softened
  • 16 CHIPS AHOY! Cookies
  • ⅓ cup flaked coconut, toasted

Directions

Spread 2 Tbsp. ice cream onto flat side of each of 8 cookies.

Cover with remaining cookies to make 8 sandwiches. Roll edges in coconut.

Freeze 2 hours or until firm.

Recipe Tips

  • How to Toast the Coconut

    Toasting coconut is easy. Just spread the coconut onto bottom of shallow pan. Bake in 350°F oven 7 to 10 min. or until coconut is lightly browned, stirring frequently. Or, spread the coconut onto bottom of microwaveable pie plate. Microwave on HIGH 3 min. or until coconut is lightly browned, stirring every minute. Watch carefully as coconut can easily burn!
