Makes 6 servings, 3 topped crackers each.

Ingredient list

  • Juice from 1 lime
  • 1 tsp. chili powder
  • ½ tsp. smoked paprika
  • 18 uncooked deveined peeled large shrimp (about 1/2 lb.)
  • 18 TRISCUIT Crackers
  • ½ cup guacamole
  • 2 Tbsp. light sour cream
  • 2 mini sweet peppers, sliced
  • 18 fresh cilantro leaves (about 2 Tbsp.)

Directions

Mix lime juice, chili powder and paprika until blended.  Add to shrimp in medium bowl; toss to evenly coat shrimp with lime juice mixture.

Heat large heavy skillet sprayed with cooking spray on medium-high heat. Add shrimp; cook 1 to 2 min. on each side or until shrimp turn pink.  Remove from heat.

Spread crackers with guacamole.

Top with shrimp and remaining ingredients.
