Love a good empanada? Try our easy appetizer version! By sandwiching chorizo empanada filling between RITZ crackers, you get the flavors with much less work.

Heat oven to 350°F.
Cook first 4 ingredients in nonstick skillet on medium-high heat until meat is done, stirring frequently. Add all remaining ingredients except crackers and cheese; cook 5 min., stirring occasionally.
Place 48 crackers in single layer on baking sheet; top with meat mixture and cheese.
Bake 3 min. or until cheese is melted. Top with remaining crackers to make 48 "empanadas."
