Makes 24 servings, 2 Tbsp. cheese mixture, 2 pieces celery and 3 crackers each.

Ingredient list

  • 2 pkg. (8 oz. each) Neufchatel cheese, softened
  • ½ cup shredded reduced-fat sharp cheddar cheese
  • 1 Tbsp. finely chopped red peppers
  • 1 Tbsp. finely chopped green onions
  • 2 tsp. Dijon mustard
  • ½ cup finely chopped fresh parsley
  • 12 stalks celery, cut crosswise into quarters
  • RITZ Crackers with Whole Wheat

Directions

Beat Neufchatel cheese and cheddar cheese in small bowl with mixer until blended.

Add peppers, onions and mustard; mix well.

Refrigerate 1 hour.

Shape cheese mixture into ball; roll in parsley.

Serve with celery and crackers.

  • Makeover - How We Did It

    We made over our original Party Cheese Ball by coating the cheese ball with parsley instead of nuts, reducing the amount of cheese and using Neufchatel cheese and 2% Milk cheddar instead of full-fat cheeses. Finally, we serve the cheese ball with RITZ Whole Wheat Crackers.

  • Substitute

    Serve with RITZ Reduced Fat Crackers instead of the RITZ Crackers with Whole Wheat.

  • Serving Suggestion

    Cut the remaining red pepper into chunks and serve with the cheese ball.
