These bite size Mexican pizza appetizers are the perfect addition to your next fiesta! Seasoned meat and melty pepper Jack cheese are sandwiched between crackers.

Makes 12 servings, 2 cracker sandwiches each.
Heat oven to 350°F.
Brown meat in skillet on medium-high heat, stirring frequently. Add fajita seasoning mix and water; cook 2 min., stirring frequently.
Place crackers, top sides down, in single layer on baking sheet; top with cheese. Bake 3 min. or until cheese is melted.
Top 24 crackers with meat mixture; cover with remaining crackers, cheese sides down. Top with remaining ingredients.
The meat mixture can be prepared ahead of time; cool completely. Refrigerate up to 24 hours. When ready to serve, microwave meat mixture on HIGH 1 min. or until heated through, then use to prepare recipe as directed.
