Place 1 graham on microwaveable plate; cover with dampened paper towel. Microwave on HIGH 20 to 30 sec. or just until graham is softened. Immediately place softened graham on flat surface; carefully cut into holiday shapes using 2-inch cookie cutters to make 2 cut-outs.
Repeat with remaining grahams. Cool. Discard any graham scraps or reserve for another use.
Decorate cut-outs with remaining ingredients as desired. Let stand until icing is firm.
