Place 12 graham squares in single layer on waxed paper-covered rimmed baking sheet.
Top with scoops of ice cream, adding about 3 Tbsp. ice cream to each graham square. Cover with remaining graham squares to make 12 sandwiches.
Insert 1 wooden pop stick into ice cream layer in each sandwich. Drizzle with chocolate; top with sprinkles.
Freeze 1 hour or until firm.
For longer storage, wrap these easy-to-make ice cream sandwiches individually in plastic wrap, then freeze up to 3 days before serving.
