Perfect for after school or as part of a delicious lunch served with hot tomato soup, these mini grilled cheese sandwiches are a fun, quick bite!

Makes 6 servings, 2 cracker sandwiches each.
Heat oven to 350°F.
Place crackers, top sides down, in single layer on baking sheet.
Top with cheese.
Bake 3 to 5 min. or until cheese is melted.
Place 12 crackers, cheese sides up, on serving plate. Cover with remaining crackers, cheese sides down, to make 12 sandwiches.
Serve with bowls of hot tomato soup.
Cut 2 oz. cheddar cheese into 24 thin pieces; use instead of the cut-up singles.
Cut EACH of 3 cooked bacon slices into 4 pieces. Top crackers with cheese and bake as directed. Place 1 bacon piece on each of 12 topped crackers before covering with second cheese-topped cracker to make sandwich.
