Recipe Tips
Special ExtraServe with a few fresh berries, such as raspberries.
Make AheadThese easy-to-make pancake squares can be baked ahead of time. Prepare recipe as directed, except do not sprinkle with powdered sugar. Cool completely; cut into squares. Store in freezer container. Or, wrap squares individually in plastic wrap before placing in freezer-weight resealable plastic bag. Freeze up to 2 weeks. Thaw at room temperature 1 hour or overnight in refrigerator before sprinkling with the powdered sugar just before serving.
VariationOmit the powdered sugar. Serve each pancake square topped with a spoonful of whipped cream, a few fresh berries, and light drizzle of warmed strawberry preserves or maple syrup. Or, prepare a powdered sugar glaze and drizzle over each square before serving. Or, sprinkle squares with cinnamon sugar before serving.
