These stacked egg sandwiches are a perfect after school snack for hungry kids. Just scramble a couple of eggs in a skillet and build these tasty bites.

Ingredient list
2 eggs
2 Tbsp. milk
2 American cheese singles, each cut into 6 pieces
24 RITZ Crackers
2 slices fully cooked bacon, each cut into 6 pieces
1 tsp. salt-free everything seasoning
1 Tbsp. ketchup

Whisk eggs and milk until frothy; cook in nonstick skillet sprayed with cooking spray on medium-low heat 2 min. or just until set, stirring occasionally. Turn off heat.

Use spatula to separate eggs into 12 equal portions in skillet; top with cheese. Cover; let stand 30 sec. or until cheese is melted.

Place 12 crackers, top sides down, on serving plate; top with bacon, eggs, seasoning and ketchup. Cover with remaining crackers, top sides up.

VariationOmit seasoning, and prepare recipe using RITZ Everything Crackers.
VariationPrepare recipe as directed, substituting cut-up cheddar or Monterey Jack cheese slices for the American cheese singles, and chipotle mayo or salsa for the ketchup. Also, top with small avocado slices before covering with the top crackers, if desired.
