These delicious fall appetizers create a sweet and savory pumpkin bite when you pipe mashed sweet potatoes onto whole grain wheat crackers and toasted marshmallow slices.

Makes 6 servings, 4 topped crackers each.
Heat broiler.
Place crackers in single layer on baking sheet. Top each with 1 marshmallow slice.
Broil, 4 to 6 inches from heat, 30 sec. to 1 min. or just until marshmallows begin to brown. (Watch carefully as marshmallows can burn quickly.)
Top marshmallows with potatoes; sprinkle with pumpkin spice.
Insert 1 onion piece into top of potato mixture for the pumpkin's stem. Serve warm.
Use a pastry bag fitted with star tip to pipe the mashed sweet potatoes onto the marshmallow-topped crackers.
You can use a leftover baked sweet potato to make this flavorful topper. Simply microwave the baked sweet potato until warmed, then mash it with a fork until smooth. Or you can use canned sweet potatoes, draining them well before microwaving and mashing them.
Use kitchen shears sprayed with cooking spray to easily cut the marshmallows into slices as directed.
