Make 8 servings, 2 topped crackers each.
Cut off and discard both ends of each zucchini, then cut each zucchini into 8 thin lengthwise slices.
Thread each zucchini slice loosely onto 1 short thin wooden skewer.
Place 1 tomato half, cut side down, on each cracker. Insert 1 end of each threaded skewer into 1 cheddar star, then insert other end of skewer into 1 tomato-topped cracker, gently pressing tip of skewer into cracker to secure.
Serve with the dressing.
Use a 1-1/2-inch star cookie cutter to cut stars out of 1/4-inch-thick cheddar cheese slices.
Use your vegetable peeler to make the zucchini slices. If desired, use a sharp knife to cut off, then discard thin slice from both ends of each zucchini. Stand 1 zucchini on work surface, then start at top of zucchini and pull vegetable peeler down the length of the zucchini to get 1 slice. Repeat to get 7 more slices from the zucchini. Repeat with the remaining zucchini. You may want to discard the center slice from each zucchini since it will have the most seeds.
For a snowy look, sprinkle appetizers lightly with grated Parmesan cheese before serving.
Prepare recipe using your favorite variety of Italian dressing and/or substituting grape tomatoes for the cherry tomatoes.
