Makes 12 servings.
Scoop 2 Tbsp. ice cream onto each of 12 crackers. Cover with remaining crackers to make sandwiches. Gently press top crackers into ice cream to secure.
Place in single layer on parchment-covered rimmed baking sheet.
Freeze 15 min.
Melt chocolate as directed on package. Dip cracker sandwiches, 1 at a time, halfway into chocolate. Let excess chocolate drip off sandwich before returning to baking sheet. Top with sprinkles.
Freeze 2 hours or until firm. Remove sandwiches from freezer 5 min. before serving to soften slightly.
