Makes 28 servings, about 2 Tbsp. dip and 11 WHEAT THINS each.
Heat oven to 375°F.
Mix Neufchatel cheese, sour cream and paprika in large bowl until blended.
Add peppers, onions, 1-1/2 cups EACH of the cheddar and Gouda cheeses, and 3/4 of the bacon; mix well.
Spoon into 1-qt. casserole dish sprayed with cooking spray.
Sprinkle with remaining cheeses and bacon.
Bake 18 to 20 min. or until dip is heated through.
Serve with WHEAT THINS.
This flavorful dip can be assembled ahead of time. Refrigerate up to 24 hours before baking as directed, increasing the baking time if necessary until dip is heated through.
Prepare recipe using turkey bacon.
Reserve 2 Tbsp. of the chopped red peppers and 1 Tbsp. of the sliced green onions before assembling and baking the dip as directed. Sprinkle dip with the reserved vegetables just before serving.
