Surprise your guests with this delicious homemade apple and pecan cheesecake. This baked cheesecake features a cinnamon graham crust and an apple and pecan topping.

Heat oven to 325°F.
Combine graham crumbs and butter with 1/2 cup nuts, 3 Tbsp. sugar and 1/2 tsp. cinnamon; press onto bottom of 9-inch springform pan. Bake 10 min.
Beat cream cheese, 1/2 cup sugar and vanilla in large bowl with mixer until well blended. Add eggs, 1 at a time, beating on low speed after each just until blended. Pour over crust.
Combine 1/3 cup sugar and remaining cinnamon. Add to apples in large bowl; toss to evenly coat apples with sugar mixture. Spoon over cream cheese layer in pan; sprinkle with remaining nuts.
Bake 1 hour 10 min. to 1 hour 15 min. or until center of cheesecake is almost set. Run knife around rim of pan to loosen cake; cool before removing rim.
Refrigerate cheesecake 4 hours.
Enjoy a serving of this rich and indulgent treat on special occasions.
For best results, use firm apples, such as Granny Smith or McIntosh.
If using a dark nonstick springform pan, reduce the oven temperature to 300ºF.
