Makes 6 servings, 3 topped crackers each.
Ingredient list
1 canned chipotle pepper in adobo sauce, finely chopped
1 Tbsp. olive oil
½ tsp. dried oregano leaves
½ tsp. ground cumin
⅛ tsp. chili powder
1 Tbsp. zest and 2 Tbsp. juice from 1 large lime, divided
18 uncooked medium shrimp, peeled, deveined
18 RITZ Crackers
2 Tbsp. chipotle mayonnaise
⅓ cup black bean and corn salsa
Directions

Combine peppers, oil, dry seasonings and lime juice in medium bowl. Add shrimp; mix lightly. Refrigerate 15 min.

Drain shrimp; discard oil mixture. Cook shrimp in large nonstick skillet on medium-high heat 2 to 3 min. on each side or until shrimp turn pink. Remove from heat.

Top crackers with mayonnaise, salsa and shrimp. Sprinkle with lime zest.
Recipe Tips
Special ExtraFor more heat, add a small dab of the adobo sauce from the canned chipotle peppers to each topped cracker.
