Bite size tostadas are the perfect Mexican appetizer! Buttery crackers are topped with chipotle shrimp and a fresh black bean and corn salsa for a delicious bite.

Makes 6 servings, 3 topped crackers each.
Combine peppers, oil, dry seasonings and lime juice in medium bowl. Add shrimp; mix lightly. Refrigerate 15 min.
Drain shrimp; discard oil mixture. Cook shrimp in large nonstick skillet on medium-high heat 2 to 3 min. on each side or until shrimp turn pink. Remove from heat.
Top crackers with mayonnaise, salsa and shrimp. Sprinkle with lime zest.
For more heat, add a small dab of the adobo sauce from the canned chipotle peppers to each topped cracker.
