Makes 8 servings, 2 cracker sandwiches each.
Melt butter in medium skillet on medium-low heat. Add onions; cook 10 to 12 min. or until golden brown, stirring frequently. Remove skillet from heat; set aside.
Heat oven to 350°F.
Place crackers, top sides down, in single layer on rimmed baking sheet; top with cheese.
Bake 2 to 3 min. or until cheese is melted.
Top 16 of the crackers with onions; cover with remaining crackers, cheese sides down, to make 16 sandwiches.
Serve warm.
Prepare recipe as directed, substituting 1/3 cup canned crispy fried onions for the cooked onions.
Stir 2 Tbsp. finely chopped cooked bacon, 1 chopped green onion or 1 Tbsp. of your favorite savory jam into the cooked onions before using as directed.
Substitute Gruyère cheese for the Swiss cheese.
