Heat oven to 350°F.
Cover rimmed baking sheet with foil; spray with cooking spray.
Spread chips evenly onto prepared baking sheet; top with cheese and peppers.
Bake 8 to 10 min. or until cheese is melted.
Top with remaining ingredients.
Spread 1 oz. RITZ Toasted Chips (about 3/4 cup) onto microwaveable plate; top with 1/4 cup cheese and 6 jalapeño pepper slices. Microwave on HIGH 20 sec. or until cheese is melted. Top with 2 tsp. sour cream, a few fresh cilantro leaves and 1 Tbsp. pico de gallo.
Prepare recipe using your favorite variety of shredded cheese, and/or substituting serrano chiles or mini bell peppers for the jalapeño peppers, and/or substituting salsa for the pico de gallo.
