Mix first 4 ingredients until blended. Reserve 1 Tbsp. honey mixture for later use.
Cook chicken in large nonstick skillet on medium heat 1 min. Stir in remaining honey mixture; cook 3 to 4 min or until chicken is done, stirring frequently.
Top crackers with tomatoes and chicken. Drizzle with reserved honey mixture; sprinkle with onions.
