When you want a classic baked cheesecake without a heavy crust, this is the dessert recipe for you! Fresh fruit makes the perfect garnish for this simple dessert.

Heat oven to 325°F.
Spray bottom of 9-inch springform pan with cooking spray; sprinkle with graham crumbs.
Beat Neufchatel, sugar and almond extract in large bowl with mixer until well blended. Gradually add whole eggs and egg whites, mixing on low speed after each addition just until blended. Pour into prepared pan.
Bake 55 min. to 1 hour or until center of cheesecake is almost set. Run knife around rim of pan to loosen cake; cool before removing rim.
Refrigerate cheesecake 4 hours.
Garnish with raspberries, strawberries, blueberries and/or fresh mint just before serving.
