Heat oven to 375°F.
Place 1 cracker sandwich in each of 12 muffin pan cups sprayed with cooking spray; top with peppers and sausage.
Whisk eggs and milk in medium bowl until well blended; pour over ingredients in muffin cups. Sprinkle with onions.
Bake 10 to 12 min. or until toothpick inserted in centers comes out clean. Cool egg bites 5 min. before loosening and removing them from the pan.
Substitute 1/2 cup chopped cooked turkey bacon, turkey ham or smoked turkey breast for the 2/3 cup cooked turkey breakfast sausage. Or for a meat-free version, omit the sausage, or substitute cooked crumbled meatless plant-based breakfast sausage for the turkey breakfast sausage.
Prepare recipe using fat-free milk and substituting 1-1/2 cups cholesterol-free egg product for the 6 eggs.
Prepare and bake recipe as directed; cool completely. Refrigerate in airtight container up to 3 days. When ready to serve, place 1 egg bite on microwaveable plate. Microwave on HIGH 15 sec. or until heated through. Or, you can instead freeze the egg bites up to 2 months. Wrap tightly in plastic wrap, then in foil before freezing. When ready to serve, place 1 unwrapped egg bite on microwaveable plate, then refrigerate 1 hour or until thawed. Microwave 15 sec. or just until heated through.
You will need to cook 4 (3/4- to 1-oz.) turkey breakfast sausage patties or 4 oz. turkey breakfast sausage links or 4 oz. crumbled turkey breakfast sausage to get the 2/3 cup cooked sausage needed to prepare this recipe.
Substitute chopped fresh chives for the green onions.
