Makes 48 servings, 1 cookie ball each.
Mix cream cheese and cookie crumbs until blended.
Shape into 48 (1-1/4-inch) balls; press to flatten.
Top each with 1 caramel; wrap cream cheese mixture around caramel to completely enclose caramel. Re-roll into balls.
Place on parchment-covered rimmed baking sheet. Freeze 10 min. Meanwhile, melt baking chocolate as directed on package.
Dip cookie balls in melted chocolate; return to baking sheet. Let stand 1 min.; sprinkle with salt.
Refrigerate 1 hour or until firm. Keep refrigerated.
Add multi-colored sprinkles to cookie balls immediately after sprinkling with the salt. Refrigerate as directed.
To easily coat balls with the melted chocolate, add balls, in batches, to bowl of melted chocolate. Use 2 forks to roll balls in chocolate until evenly coated. Remove balls with forks, letting excess chocolate drip back into bowl. Place balls in prepared pan. Continue as directed.
These cookie balls make a great gift to bring to a party. Package in a sealed themed container or cookie tin. Keep refrigerated until ready to give away.
Store cookie balls in an airtight container in the frig up to 3 days.
