Makes 12 servings.
Place 12 cookies in single layer on parchment-covered rimmed baking sheet or tray.
Mix yogurt and vanilla in medium bowl until blended. Gently stir in whipped topping; spoon onto cookies on baking sheet, adding about 1 Tbsp. yogurt mixture to each cookie.
Cover with remaining cookies to make 12 sandwiches.
Roll outsides of cookie sandwiches in sprinkles.
Freeze 1 hour or until firm.
Substitute 1 Tbsp. finely chopped walnuts or sweetened flaked coconut, or 2 Tbsp. mini chocolate chips for the sprinkles.
No freezer space? Instead refrigerate the assembled cookie sandwiches 4 hours before serving.
