Spread peanut butter onto bottoms of 12 cookies; place, peanut butter-sides up, in freezer-proof pan.
Top with spreadable fruit, then whipped topping.
Cover with remaining cookies, bottom sides down, to make 12 sandwiches.
Freeze 1 hour.
