These easy, no bake Halloween desserts are almost too cute to eat! And they're easy - you can assemble them in just 20 minutes. They'll be the hit of the party!

Reserve 1 Tbsp. whipped topping for later use. Whisk remaining whipped topping and food color until well blended.
Spoon about 2 Tbsp. of the whipped topping onto 16 of the cookies; place on parchment-lined rimmed baking sheet. Cover with remaining cookies to make 16 sandwiches, gently pressing top cookies into whipped topping to secure.
Add 2 candy eyes to front and 2 chocolate chips to sides of each whoopie pie to resemble a Frankenstein monster.
Spoon reserved whipped topping into small resealable plastic bag. Cut small piece off one bottom corner of bag; use to pipe 3 lines of whipped topping onto side of filling in each whoopie pie to resemble scars as shown in photo.
Freeze 1 hour or until firm.
Candy eyes may bleed if stored in the freezer for more than 1 hour. If planning to freeze the whoopie pies longer than 1 hour, do not add the candy eyes until just before serving the whoopie pies. Or, you can instead use mini chocolate chips for the eyes since they can be frozen up to 1 week before serving the whoopie pies.
For smoother sides of whipped topping filling, spoon tinted whipped topping into large pastry bag fitted with 1/2-inch round tip; use to pipe whipped topping onto the 16 cookies, then continue as directed.
Omit green food coloring. Instead fill cookies with plain whipped topping as directed. Add 2 candy eyes to filling in each whoopie pie to resemble a ghost.
Omit green food color. Fill each of 2 cookies with 2 Tbsp. slightly softened green peppermint ice cream instead of the tinted whipped topping.
