Place 6 cookies, top sides up, in single layer on parchment-covered baking sheet. Drizzle with icings, then top each cookie with about 6 candy eyeballs.
Refrigerate 5 min. or until icings are firm.
Meanwhile, place remaining cookies, top sides down, on another baking sheet. Top each cookie with 2 Tbsp. ice cream.
Cover ice cream-topped cookies with decorated cookies, flat sides down, to make 6 ice cream sandwiches, gently pressing top cookies into ice cream to secure.
Freeze 2 hours or until firm.
Decorating these cookies is easy when you use decorating cookie icings which have a slightly thinner consistency than that of ready-to-spread frostings. Decorating cookie icings come in ready-to-use tubes with decorating tips attached. The round tip works well when needing to make even lines such as what was done on these decorated ice cream sandwiches. Look for decorating cookie icings near the canned frostings and decorating gels in the baking aisle of your supermarket.
Prepare this recipe using your favorite variety of CHIPS AHOY! Cookies and/or your favorite flavor of ice cream.
For longer storage, freeze these fun ice cream sandwiches as directed, then wrap them individually in plastic wrap before placing them in a freezer-weight resealable plastic bag. Freeze up to 1 month before serving.
