Start your morning off right with these warm banana bread "French toast" cups. As a bonus, you can feel good about this balanced breakfast recipe with 14g of whole grains per serving. We paired them with low-fat yogurt and berries to provide 3 food groups - grain, dairy and fruit. Enjoy!

Servings:

Makes 5 servings, 2 "French toast" cups, about 1/3 cup yogurt and 1/2 cup strawberries each.

Ingredient list

  • 4 cups small strawberries, divided
  • 3 eggs
  • ¾ cup milk
  • ½ tsp. ground cinnamon
  • 5 pkt. (1.76 oz. each) belVita Soft Baked Banana Bread Breakfast Biscuits (1 biscuit each), coarsely broken
  • 1⅔ cups vanilla low-fat Greek yogurt

Directions

Heat oven to 350°F.

Chop 1 cup strawberries; set aside. Reserve remaining whole strawberries for later use.

Whisk eggs, milk and cinnamon in medium bowl until blended.

Divide biscuit pieces evenly among 10 muffin pan cups sprayed with cooking spray; top with chopped strawberries.

Pour egg mixture over ingredients in muffin cups.

Bake 16 to 18 min. or until toothpick inserted in centers of "French toast" cups comes out clean.

Cool "French toast" cups 5 min. before transferring from pan to wire rack. Cool an additional 5 min.  Meanwhile, slice reserved strawberries.

Serve "French toast" cups with the yogurt and sliced strawberries on the side.

Recipe Tips

  • Make Ahead

    These "French toast" cups can be baked ahead of time. Cool completely, then wrap them individually in plastic wrap before placing them in a freezer-weight resealable plastic bag.  Freeze up to 1 week.  Thaw overnight in the refrigerator, then place unwrapped "French toast" cups on a microwaveable plate and microwave them on HIGH 15 to 20 sec. or just until warmed. 

  • Special Extra

    Drizzle 1/4 tsp. maple syrup over each warm "French toast" cup before serving.

  • Variation

    Prepare recipe as directed, substituting belVita Soft Baked Oats & Chocolate Breakfast Biscuits and/or substituting 4 bananas for the strawberries.  Chop 1-1/2 of the bananas; place over biscuit pieces in muffin pan cups before adding the egg mixture and baking as directed. Slice the remaining 2-1/2 bananas to serve with the baked "French toast" cups and yogurt.
