Makes 2 servings, 4 topped biscuits and 1/2 apple each.

Ingredient list

  • ½ cup plain nonfat Greek yogurt
  • ½ cup canned pumpkin
  • 2 tsp. honey
  • ¼ tsp. pumpkin pie spice
  • 2 pkt. (1.76 oz. each) belVita Cinnamon Brown Sugar Breakfast Biscuits (4 biscuits each)
  • 16 pecan halves (about 1/4 cup), toasted
  • 1 apple, sliced

Directions

Mix yogurt, pumpkin, honey and pumpkin pie spice until blended.

Spread yogurt mixture onto biscuits; top with nuts.

Serve topped biscuits with apple slices.

  • Substitute

    Prepare using your favorite crunchy belVita Breakfast Biscuits, such as Toasted Coconut, Golden Oat or Limited Edition Pumpkin Spice. 

  • How to Store and Use Any Leftover Pumpkin

    Since this recipe only uses 1/2 cup canned pumpkin, you can spoon any leftover pumpkin into an airtight container and refrigerate it up to 5 days before using as desired.  Or to freeze it for longer storage, spoon 2 Tbsp. pumpkin into each section of an ice cube tray, or spoon 1/2 cup of the leftover pumpkin into each silicone muffin pan cup, then cover the pumpkin and freeze it until frozen solid.  Transfer the frozen pumpkin to a freezer-weight resealable plastic bag and freeze it up to 3 months.  When ready to use, thaw the desired amount of pumpkin overnight in the refrigerator then add it to the batter for pancakes or muffins; or stir it into yogurt or hot cooked oatmeal; or use it to make a hot latte drink or cold refreshing smoothie. Or, you can mix the leftover pumpkin with softened cream cheese and spread it onto your morning bagel or your favorite flavor of belVita Breakfast Biscuits.
