Makes 12 servings, 2 cracker sandwiches each.
Heat oven to 375°F.
Combine cheese, onions and bacon; spoon into 24 mini muffin pan cups sprayed with cooking spray, adding about 1 Tbsp. cheese mixture to each cup.
Whisk eggs, sour cream and chili powder until blended; spoon over cheese mixture adding about 1 Tbsp. egg mixture to each cup. Tap pans gently on counter to remove any air bubbles in egg mixture.
Bake 10 to 12 min. or until centers are almost set. Cool 10 min. before removing egg puffs from cups.
Place 1 egg puff on each of 24 crackers; top with remaining crackers to make 24 sandwiches. Serve warm.
Prepare using your favorite variety of shredded cheese, such as pepper Jack, Colby Jack or a Mexican-style blend.
Slow down and take enough time between bites to enjoy your portion of these delicious egg sandwiches.
