Makes 1 serving.
Cook spinach and tomatoes in medium nonstick skillet over medium heat 1 to 2 min. or just until spinach is wilted, stirring frequently.
Add eggs; cook and stir 30 sec. Add cheese; cook 1 to 2 min. or just until eggs are set, stirring occasionally.
Place biscuits in single layer on plate; top with egg mixture.
You will need to chop about 4 cherry tomatoes, 4 grape tomatoes or 1 Campari tomato to get the 2 Tbsp. chopped tomatoes needed to prepare this recipe.
Prepare this recipe substituting your favorite chopped cooked vegetables, such as broccoli, onions, zucchini and/or red peppers, for the spinach and tomatoes. Or, you can use 1/2 cup of whatever leftover cooked vegetables you have on hand, warming them in the skillet before adding them to the eggs.
Instead of adding the tomatoes to the egg scramble, you can cook the spinach in the skillet just until wilted before adding the eggs and continuing as directed. Serve the biscuits topped with the cooked egg mixture and the tomatoes.
If you don't have a nonstick skillet, you can instead spray a regular skillet with cooking spray before using as directed.
