Makes 4 servings, 4 topped crackers each.
Place crackers, top sides up, on platter. Roll cheese spread into 16 balls, using about 2 tsp. cheese spread for each ball. Place on crackers.
Tuck 1 pepper strip under edge of each cheese ball for the snowman's scarf as shown in photo.
Cut carrot into 8 lengthwise slices, then cut each slice crosswise in half. Press 1 carrot piece and 2 peppercorns into each cheese ball for the snowman's eyes and nose.
Top with olives for the hats.
