Heat oven to 350°F.
Chop 3 cookies; place in small bowl. Melt 1 Tbsp. butter. Add to chopped cookies along with the nuts; mix lightly. Set aside.
Melt remaining butter in large skillet on medium heat. Add apples and cinnamon; stir. Cook 2 to 3 min. or until apples are crisp-tender, stirring frequently. Remove skillet from heat.
Stir syrup into apple mixture; spoon into small casserole dish sprayed with cooking spray. Top with cookie mixture.
Bake 10 to 12 min. or until apples are tender and cookie topping is lightly browned. Cool slightly.
Serve remaining cookies topped with whipped topping and apple mixture, adding about 1 tsp. whipped topping and 2 Tbsp. apple mixture to each cookie.
Use your favorite baking apples in this recipe. Good choices for baking apples include Braeburn, Granny Smith, Honeycrisp, Pink Lady, and Jonagold.
These apple pie bites are easy to add to a buffet. Just serve the cookies, apple mixture and whipped topping in separate dishes and invite your guests to assemble their own dessert bites.
Add 1/4 cup dried cranberries to the apple mixture before spooning into prepared casserole dish and/or stir 2 Tbsp. mini semi-sweet chocolate chips into the cookie topping before sprinkling over the dessert and baking as directed.
Substitute pumpkin pie spice for the cinnamon.
